Preparing vegan pizza at home is easy: just a few ingredients and knowing a few “tricks” to get the right leavening. Here we reveal ours with many ideas on how to season it and some alternative recipes.

Ingredients for That Perfect Vegan Pizza
- 600 g of wholemeal flour
- 400 ml of water
- 20 g of brewer’s yeast
- 15 g of salt
- 140 ml of extra virgin olive oil
- 2 teaspoons of sugar
The First Dough
First, dissolve the brewer’s yeast and sugar in 300 ml of water at room temperature, dissolve the salt in the remaining 100 ml. Meanwhile, in a large bowl pour 200 g of flour with 150 ml of water and yeast and mix: you will have to obtain a very thick batter that you will cover with a cloth and leave to rest for 20 minutes.
The Second Dough
After the exposure time, you will find bubbles on the surface: at this point add the rest of the flour to the water with the yeast and mix well; once the water has absorbed, add the rest of the water with the salt and oil and continue kneading for at least 15 minutes: the dough should be soft and sticky.
After kneading well, grease the dough and cover it with a cloth, then put it in the oven off but with the light on and let it rise for 2 and a half hours. At the end, roll out the dough well on a previously oiled baking tray and let it rise again for at least 30 minutes, always at a controlled temperature in the oven.
At the end of the rising, place the tomato puree on the pizza (or part of the sauce you have prepared). The pizza is now ready to be baked: we advise you to cook it by setting the maximum oven temperature for 15/20 minutes. Then take out the pizza, add the rest of the topping and bake again, again at maximum temperature, for another 15 minutes.
The Yeast for Vegan Pizza: Which One to Use?
To prepare vegan pizza you can use both fresh and dry yeast. As for the doses, keep in mind that 25 g of fresh yeast is equivalent to a 10 g sachet of dry brewer’s yeast and that, for both, as the dose of yeast decreases, the rising time will have to increase (if, for example, use half a dose of yeast compared to the one indicated, the dough will have to rise twice as long). If you use dry yeast, remember that before the use, it must be dissolved in a little water with a little sugar and left to rest for about ten minutes. When it begins to foam, it will signal that the yeast is active and that you can proceed as per the recipe.
The problem with yeasts on the market is that they may not be vegan but of animal origin. For this reason it is good to make sure of the origin of the purchased yeast or to use the self-produced mother yeast to make pizza at home.
Vegan Mozzarella for Pizza
Given that a vegetable alternative to mozzarella is not essential to enjoy a mouth-watering vegan pizza, it is also true that it adds an extra touch of taste and creaminess that not everyone is willing to give up. Now on the market there are valid 100% vegetable alternatives to classic cheeses, even in traditional supermarkets.
How to Season Vegan Pizza
Once you have made your pizza dough you can indulge yourself with the toppings of your choice: whether it is red based on tomato sauce, white with a vegetable mozzarella or green based with a good vegan basil pesto, the possibilities are truly endless. Make way for the classic grilled vegetables with the addition of a veil of olive pate to make them tastier, with rocket in combination with succulent porcini mushrooms in oil, with escarole sautéed with olives and raisins. Try, for example, some vegetable cold cuts, which are also very easy to make at home (with the chickpeas, lentils or beans!), or with turnip greens sautéed with garlic and chilli and smoked tofu.
How to Store Vegan Pizza
The pizza can be kept in the fridge for a couple of days wrapped in aluminium foil. If you prefer to prepare it earlier, you can also freeze it whole or already cut into slices, taking care to separate it with a little parchment paper. Before consuming it, heat it directly in a pan or on a plate, still frozen.
